Ratatouille Baked Portobello Mushroom

Ingredients

  • For Ratatouille -
  • 3 Courgettes
  • 3 Bell Peppers
  • 1 Onion
  • Italian Herb Mix, Oregano, Basil, Thyme
  • 2 Tins of Chopped Tomatos
  • Olives to taste
  • Garlic
  • Salt & Pepper to taste
  • For the Mushrooms -
  • 4 Portabello Mushrooms cleaned and stalk removed
  • Cheat by using a Garlic and Herb Dip like Philadelphia, pile that in the Mushrooms, as much as will fit..
  • Breadcrumbs with some grated parmigiano and crushed almonds.

Directions

  • Preheat oven to 180˚C.
  • 0 Minutes Chop all the Ratatouille vegetable ingredients only and cook for 15 minutes.
  • 15 Minutes Turn and return for another 15 minutes until turning and colouring.
  • 30 Minutes Add the tinned tomato to the Ratatouille and herbs.
  • 30 Minutes Add the Mushrooms for 15 minutes
  • 45 Minutes Serve…..
