Pineapple Curry

Ingredients

  • 1 Pineapple chopped
  • 1 Onion sliced
  • 1 Teaspoon of Mustard Seeds
  • 1 Teaspoon of Ground Cumin
  • 1/2 Teaspoon of Tumeric
  • 3 Cardamon crushed
  • 1 Can of Coconut Milk
  • 1 Chilli Pepper to taste
  • Salt and Pepper to Taste

Directions

  • Best done in a wok, fry the onion until soft as always.
  • Add in the pineapple and heat through
  • Add the spices and fry for 3 minutes releasing the flavour
  • Add The coconut milk and also half fill the can with water and add that too.
  • Bring to a simmer for 20 - 30 minutes so you can prep the rice.
