1 Pineapple chopped1 Onion sliced1 Teaspoon of Mustard Seeds1 Teaspoon of Ground Cumin1/2 Teaspoon of Tumeric3 Cardamon crushed1 Can of Coconut Milk1 Chilli Pepper to tasteSalt and Pepper to Taste

Best done in a wok, fry the onion until soft as always.Add in the pineapple and heat throughAdd the spices and fry for 3 minutes releasing the flavourAdd The coconut milk and also half fill the can with water and add that too.Bring to a simmer for 20 - 30 minutes so you can prep the rice.
