Use a pancake batter of your choice, this really is about the prawns and a savoury option.300g of king prawns but any cooked clean prawns will work fine.See my Vietnamese dipping sauce recipe, this is perfect with it.

Preheat pan and throw in a few prawns to warm then up.Drop them into a small bowl to then cook the pancakePop in enough batter to cover the bottom of the pan and immediately throw in the prawnsUse a fish server with a cut edge to go round the pan until you are ready for go time.When the base is nicely browned and the top just about set flip the pancake, good luck :-)Keep shuffling the pan on the heat to prevent it sticking and when browned on the other side serveIf you are cooking a few drop them onto a pan in the oven to just keep warmCheckout my mushroom and Parmagiano recipe too
