One Pan Breakfast

Ingredients

  • For 1 person, scale up as appropriate & just double, try adding mushrooms too
  • 3 eggs
  • 2 Small Sausages, chipolata though as need to cook quick. Trying to keep it healthy, use Heck chicken sausages
  • 1 Tomato
  • Salt & Pepper to Taste

Directions

  • Using a non stick pan, I like a small 10-15cm one for this fry the sausages for 8 minutes gently.
  • Add the tomato and fry either side until it is warmed thourgh and charred on the front face.
  • Throw in the egg and pop the lid on the pan and wait until the egg is cooked.
  • To remove from the pan I use a fish spatula to edge around the omlette so it comes in one piece.
