For 1 person, scale up as appropriate & just double, try adding mushrooms too3 eggs2 Small Sausages, chipolata though as need to cook quick. Trying to keep it healthy, use Heck chicken sausages1 TomatoSalt & Pepper to Taste

Using a non stick pan, I like a small 10-15cm one for this fry the sausages for 8 minutes gently.Add the tomato and fry either side until it is warmed thourgh and charred on the front face.Throw in the egg and pop the lid on the pan and wait until the egg is cooked.To remove from the pan I use a fish spatula to edge around the omlette so it comes in one piece.
