2 Eggs2 AvocadoLime JuiceSalt & PepperHalf a block of Halloumi2 Tomatoes & Italian herbs to dress2 Pieces of bread of choice toasted

Crush the Avocado and add the lime with salt and pepper to tasteIn a small pan fry the Halloumi but it is optional with the tomatoes, the herbs should be added to dress only at the end.Poach the eggs, I use those plastic things with oil in. Place in the pan and bring to a rolling boil and then time for two and half minutes.When the pan is at a rolling boil toast the bread.When the bread is ready spread the avocado over it.Take the eggs out exactly on time as they will continue to cook and ruin your yoke if not stopped.
