Lockdown Avocado Poached Egg Halloumi

Ingredients

  • 2 Eggs
  • 2 Avocado
  • Lime Juice
  • Salt & Pepper
  • Half a block of Halloumi
  • 2 Tomatoes & Italian herbs to dress
  • 2 Pieces of bread of choice toasted

Directions

  • Crush the Avocado and add the lime with salt and pepper to taste
  • In a small pan fry the Halloumi but it is optional with the tomatoes, the herbs should be added to dress only at the end.
  • Poach the eggs, I use those plastic things with oil in. Place in the pan and bring to a rolling boil and then time for two and half minutes.
  • When the pan is at a rolling boil toast the bread.
  • When the bread is ready spread the avocado over it.
  • Take the eggs out exactly on time as they will continue to cook and ruin your yoke if not stopped.
