Chilli Powder

Fresh chillies blended with a splash of water, smeared onto parchment, dried in the dehydrator and then blitzed to a powder. Nothing added, just pure chilli, and the colour is far brighter than anything you will find in a shop-bought jar.

Yields: 16 small jars

Ingredients

  • Fresh chillies, as many as you like (any variety or a mix)
  • A small splash of water, just enough to help the blender
  • Parchment paper
  • A dehydrator
  • Small jars or shakers to store it in

Directions

  • Wash the chillies and remove the stalks. Wear gloves, chilli oils linger on your fingers long after you think you’ve washed them off.
  • Blend the chillies in a blender with a small amount of water to make a thick paste.
  • Smear the paste thinly and evenly onto sheets of parchment paper, the thinner it is the faster and more evenly it dries.
  • Dry in the dehydrator until the paste is completely dry and brittle, it should snap and crack off the parchment like chilli leather.
  • Break the dried sheets up and blend again until you have a fine powder. Open the blender slowly and stand back, the chilli dust will make you cough!
  • Pour into clean, dry jars or shakers and keep somewhere cool and dark.
