Ingredients

  • Can of Chickpeas
  • 1 onion
  • 3 Garlic Cloves
  • 3 Tomatoes
  • Fresh corriander to dress
  • Thumb size piece of ginger
  • Fresh chilli to taste
  • Tablespoon of Tomato Paste
  • Teaspoon of fresh ground corriander
  • Teaspoon of fresh ground cumin
  • Teaspoon of Tumeric
  • Teaspoon of garam masala
  • Teaspoon of Ground Corriander
  • 1 teaspoons black pepper

Directions

  • This dish is lovely and healthy, sometimes I have this for lunch with Chapati like a wrap :-)
  • Start by frying the onion, chop the tomatoes and add those in too, cook for 7 minutes until onion is soft
  • Now add the ginger finely chopped with the garlic for 3 minutes
  • Add in all the other spices and fry for 3 minites to release the flavours
  • Add in the chickpeas & Tin of tomatoes, chop corriander
  • Simmer for 20 minutes to allow the flavours to develop. Freezes really well and the flavour is even better
