This dish is lovely and healthy, sometimes I have this for lunch with Chapati like a wrap :-)Start by frying the onion, chop the tomatoes and add those in too, cook for 7 minutes until onion is softNow add the ginger finely chopped with the garlic for 3 minutesAdd in all the other spices and fry for 3 minites to release the flavoursAdd in the chickpeas & Tin of tomatoes, chop corrianderSimmer for 20 minutes to allow the flavours to develop. Freezes really well and the flavour is even better
