Beef Patty with Cajun Vegetable Ratatouille and Brown Rice

Ingredients

  • 300g lean beef mince
  • 1/2 onion, grated
  • 1 clove garlic, minced
  • 1 tsp Worcestershire sauce
  • Salt and pepper
  • 1 courgette, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 small sweet potato, diced
  • 1 tin chopped tomatoes
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 200g brown rice
  • Pickled cucumber slices and hot sauce to serve

Directions

  • Cook the brown rice in lightly salted water according to the packet (usually 25-30 minutes). Drain and keep warm.
  • Mix the beef mince with grated onion, garlic, Worcestershire sauce, salt and pepper. Shape into two thick patties. Cover and chill while you make the ratatouille.
  • Heat olive oil in a wide pan over medium heat. Add the sweet potato and cook for 5 minutes until starting to soften. Add the peppers and courgette and cook for a further 5 minutes.
  • Add the Cajun seasoning, smoked paprika and cumin and stir to coat the veg. Pour in the chopped tomatoes, season and simmer for 10-15 minutes until the veg is tender and the sauce has thickened.
  • Heat a griddle or frying pan to high. Brush the patties with oil and cook for 4-5 minutes per side for medium, or until cooked to your liking.
  • Serve the patty on a bed of rice with the spiced ratatouille alongside and pickled cucumbers and hot sauce to finish.
