Baked Chicken and Spicy Smokey Bean Ratatouille

Ingredients

  • 4 Chicken Breasts
  • 1 Can of butter beans or mixed beans
  • 2 Tin of chopped tomatoes
  • 1 Red onion
  • 1 Chilli of your choice depending how hot you want it :-)
  • Herb Mix, Oregano, Basil, mediterreanean herbs go well
  • Olives to taste, do not add salt as the olives provide this
  • 3 Cloves of chopped garlic
  • Liquid smoke or smoked paprika - to taste
  • Bell pepper
  • 1 or 2 Caugettes
  • 2 teaspoons black pepper

Directions

  • Preheat oven to 180˚C.
  • In a large pyrex dish or roasting tin with high sides roast the onion, caugette’s, pepper for 20 minutes
  • 10 minutes later with the chicken in a differnt dish pop it in, essentially the chicken will cook for 30 minutes turned once
  • After 20 minutes stir and add some black pepper with a sprinkle of the herbs with the chopped garlic
  • With 20 minutes remaining drain and wash the butter beans and add them with the chopped tomatoes to the dish with remaining herbs, olives & smoked paprika or the liquid smoke
  • Timings nailed down easy peasy :-)
  • 20 minutes turn veg
  • 30 minutes pop in the chicken
  • 40 minutes turn veg
  • 45 turn chicken & season again
  • 60 minutes serve
