Baked Chicken and Spicy Smokey Bean Ratatouille

4 Chicken Breasts1 Can of butter beans or mixed beans2 Tin of chopped tomatoes1 Red onion1 Chilli of your choice depending how hot you want it :-)Herb Mix, Oregano, Basil, mediterreanean herbs go wellOlives to taste, do not add salt as the olives provide this3 Cloves of chopped garlicLiquid smoke or smoked paprika - to tasteBell pepper1 or 2 Caugettes2 teaspoons black pepper

Preheat oven to 180˚C.In a large pyrex dish or roasting tin with high sides roast the onion, caugette’s, pepper for 20 minutes10 minutes later with the chicken in a differnt dish pop it in, essentially the chicken will cook for 30 minutes turned onceAfter 20 minutes stir and add some black pepper with a sprinkle of the herbs with the chopped garlicWith 20 minutes remaining drain and wash the butter beans and add them with the chopped tomatoes to the dish with remaining herbs, olives & smoked paprika or the liquid smokeTimings nailed down easy peasy :-)20 minutes turn veg30 minutes pop in the chicken40 minutes turn veg45 turn chicken & season again60 minutes serve
